And the Channel Islands are also EU, but not Schengen, AFAIK.

The Schengen agreement is today part of the EU treaties. All EU members, except Ireland and the UK, are obliged to be part of Schengen once they satisfy Schengen’s requirements.

Yes and some don’t just yet.

Others like Portugal obviously do but appear to choose not to honour Schengen.

Don’t know how current this requirement is but it was not enforced for Croatia.

However, Euro membership is also mandatory for new members.

EUR membership is not mandatory for Schengen. As a matter of fact it is not mandatory for EU membership either.
