I would go backpacking around some Greek islands. In fact… that’s what we are going to do quite soon

My idea, too, but I am hesitating between a light aircraft and a motorcycle.
Packing three sets of underwear, two shirts, a credit card and exploring the perimeter of what can be reached VFR by a small SEP (Scottish islands, Maroc, west Africa, Mediterranean Sea, Turkey, Greece, Balkan, Ukraine, Baltic states, Scandinavia and back to west Europe).
I’d turn off my work email and phone, and at that point would be concerned (for my longer term finances) that I’d never go back!

Yes I agree but nostalgia can be womderful.
On a more probable note I think I would plan a month long journey to Australia and back just to prove I could do it at my age in a piston single. The old saying about nothing ventured nothing gained is so true.
