Does anyone know of any good airports in Northern Europe which are open late and have good restaurants near? (and of course are not too expensive….)

Well, what about “Havnekontoret” in Kristiansund (ENKB)? They have excellent Baccalao. It is not on the airport -you’ll need a ride into town. 
Northern Europe is quite big. Could you maybe be a little more specific? A hint about at least a longitude?
Paderborn EDLP is open 24 not sure with a restaurat, EDDV is too open 24h and with a restaurant at the main terminal. But I think the GAT is closing at some time and they charge extra when you leave late.

EDLP has good gastronomy. There’s a few places in the terminal that close depending on the last scheduled flight and there is a really very nice lounge/restaurant a few minutes from the terminal with a new view of the airfield. They’re obviously not 24h.
Try EBAW Antwerp. Very close to the city and the field is open until 2230 Lt. You’ll probably find great restaurants in the city center.
